Valentine’s Day Sugar Cookies

I know, I know I’m always a little late with the posts and Valentines Day passed; but, I finished this wonderful cookies late last night and I was to tired to write a post after that .

It doesn’t matter what cutters do you use, the recipe is very easy to make and  they are very tasty and fluffy inside . Together with the royal icing decoration they become so adorable and you will not be able to stop eating them. 🙂

Valentine’s Day Sugar Cookies (4)

Ingredients:

  • 195 gr flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 113 gr butter
  • 100 gr sugar
  • 1 egg ,  lightly beaten
  • 1 teaspoon vanilla essence

Directions:

  1. In a bowl whisk together the flour, salt, and baking soda and set aside
  2. In the bowl of your mixer beat the butter and sugar until light and fluffy (about 3 to 4 minutes).
  3. Add the beaten egg and vanilla extract and beat until combined.
  4. Add the flour mixture and beat until you have a smooth dough.
  5. Wrap the dough in plastic wrap and refrigerate for about one hour until firm enough to roll
  6. Preheat oven to 177 degrees C and place rack in the center of the oven. Line two baking sheets with parchment paper.
  7. Remove the chilled dough from the refrigerator and, on a lightly floured surface, roll out the dough to a thickness of 6 cm. (Keep turning the dough as you roll, making sure the dough does not stick to the counter.) Cut out shapes using a lightly floured cookie cutter and transfer cookies to the prepared baking sheet.
  8. Bake cookies for about 8-10 minutes or until they are just beginning to brown around the edges. Remove from oven and let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to finish cooling.
  9. Frost with royal icing and sparking sugar, if desired. Be sure to let the royal icing dry completely before storing. (This may take several hours.)
