Mini Apple Pies

How are you dear people?  Let’s start the new year with taking a moment to acknowledge and be grateful for  the year that pasted and  to take a fresh look at 2017 and hope it will be at least as good as the one that passed .   

I’m starting the year with a lovely mini apple pie recipe that I’ve wanted to try for a time because it looked  so cute to make ; and yes, it’s soo easy to make and not forget fun 🙂 .  You can enjoy them as they are or with a nice bowl of ice cream or a mug of hot chocolate. I love making them in the cold season and to give them to friends.

INGREDIENTS :

FOR THE CRUST:

  • 400 gr all-purpose flour
  • Pinch of salt
  • 2 Tbsp icing sugar
  • 200 gr cold unsalted butter, cubed
  • 2 egg yolk
  • 4-6 Tbsp cold water
  • Note : if you don’t eat eggs then leave the egg yolk out and add 2 tablespoons of cold water instead.

FOR THE FILLING:

  • 2-3 apples
  • 55 gr  brown sugar
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • 2 Tbsp butter
  • 1 Tbsp corn starch
  • Egg wash (1 egg, beaten with a splash of cream)

DIRECTIONS:

  1. Make the Crust : Put flour, butter, icing sugar and salt in a food processor. Pulse until fine crumbs form.
  2. Mix together the egg yolks and water and add to the dry ingredients.
  3. Pulse until a dough forms, around 10 seconds.
  4. Wrap the pastry in cling wrap and refrigerate for 30 minutes to allow the gluten to relax before rolling.
  5. Preheat the oven to 190 C and line a baking sheet with parchment paper
  6. Make the filling: Melt the butter in a medium skillet over medium heat. Add the diced apples, apple pie spice, cinnamon and cornstarch. Cook about 3-5 minutes so the apples start to soften and the cornstarch thickens the sauce. Once the apples are almost tender, remove from the heat and let cool to room temperature.
  7. Roll on the dough on a floured surface to fit and cut in 2 pieces. Roll the first one in  about 1 cm  larger in diameter. I rolled the first crust larger because it will be the top crust that needs to enclose the filling completely. Rolling it slightly bigger than the bottom crust will ensure you can seal the dough without stretching it too much and tearing a hole in the dough. I’ve cut them with a round cylinder cookie form to have the below form, about 7 cm. 
  8. Roll the second crust, then cut the forms and  start putting a  tablespoon of the apple filling in each form. Repeat around the whole crust, leaving enough space to seal  them. 
  9. Brush the egg wash around the filling and out to the edges using a pastry brush.
  10. Place the larger crusts over the top of every one and gently press down between the mounds of filling.
  11. Lift up each apple pie cookie and place on the lined baking sheet. Press to completely seal the edges on each one, then crimp the edges with a fork.
  12. Brush the tops with the egg wash, then cut slits in the top of each crust for steam to escape.
  13. Bake 15-18 minutes, until golden brown.
  14. Makes around 10

ROMANIAN

Mini – placintele cu mere

Am inceput acest an cu o reteta de mini-placintele cu mere pe care vroiam sa o incerc de ceva vreme deoarece mi se pare atat de dragute placintelele care ies si pentru ca este si foarte usor de facut si foarte distractiv in acelasi timp. 

Va puteti bucura de ele simple, cum ies din cuptor sau impreuna cu o inghetata de vanilie sau o cana de ciocolata calda….yummm ….

INGREDIENTE :

PENTRU CRUSTA:

  • 400 gr faina
  • un pic de sare
  • 2 Tbsp zahar pudra
  • 200 gr unt rece, taiat cubulete
  • 2 galbenusuri de ou
  • 4-6 Tbsp apa rece

PENTRU CONTINUT : 

  • 2-3 mere
  • 55 gr  zahar brun
  • 1/2 tsp scortisoara
  • 1/2 tsp nucsoara
  • 2 Tbsp unt
  • 1 Tbsp amidon
  •  1 ou batut 

Note : daca nu mancati oua puteti sa le inlocuiti cu 2 linguri de apa rece

INDICATII:

  1. Crusta : Incalzim cuptorul la 190 C
  2. Punem faina, untul, zaharul pudra si sarea intr-un robot de bucatarie.  Amestecam pana cand se formeaza firimituri fine.
  3. Amestecam galbenusurile si apa apoi le adaugam peste  ingredientele uscate. 
  4. Amestecam pana se formeaza aluatul, aproximativ 10 secunde.
  5. Invelim aluatul in folie si il punem la frigider pentru 30 min inainte de al rula
  6. Continutul:  Topim untul intr-un vas la foc mediu. Adaugam merele taiate patratele, scortisoara, nucsoara si amidonul. Gatiti aproximativ 3-5 minute, pana cand merele incep sa se inmoaie iar amidonul de porumb ingroasa sosul. Odata ce merele se inmoaie, se iau de pe foc si se lasa sa se raceasca pana ajung la temperatura camerei.  
  7. Rulam aluatul pe o suprafata presarata cu faina si o taiem in 2 bucati.  O rula pe prima cu aproximativ 1 cm in diametru mai mare. Eu am rulat-o pe prima mai mare, deoarece ea va fi crusta de sus care trebuie sa acopera continutul perfect. Am taiat formele cu cutter rotund de la sugar cookies, de aproximativ 7 cm.   
  8. Rulam cea de a doaua coca,  taiem formele rotunde si apoi incepem sa le umplem cu mere, pe fiecare punem aproximativ 1 lingura de continut. Repetam pentru fiecare forma , lasand destul spatiul pentru a le inchide.
  9. Ungem cu oul batut in jurul umpluturii si pe margini cu o peensula de brutarie. 
  10. Se pun foile mai mari peste cele cu umplutura si apasam usor pentru a le modela .
  11. Se pune fiecare placinta pe tava de la cuptor.  Apasam ca sa lipim marginile foarte bine la fiecare si apoi incretim marginile cu o furculita.
  12. Se unge fiecare placinta cu ou, apoi taiem fante in  partea superioara a fiecarei cruste.
  13. Se da la cuptor pentru 15-18 minute, pana capata o culoare aurie 
  14. Se fac in jur de 10 bucati.
