I hope everyone is getting excited about Halloween, fall colors, pumpkin baked goods, hot chocolate, comfort foods, sweaters, and all things autumn!

Halloween is almost here and I wanted to prepare some delicious Halloween spooky cupcakes for the occasion. This easy Halloween spooky cupcakes are also cute and be sure everyone will love and eat them in no time!

Also, they are so easy to make and will be lots of fun to try the recipe together with your little ones. They will surely love to play with all the colors and decorations.

In my country, we don’t really celebrate Halloween. We mostly throw parties so that we can wear costumes, but we don’t do the candies and all the “trick or treat”. I always wanted to go somewhere where they do it, and now that I live in the Netherlands I can, yeey . So, this year is extra special for me.

For my first Halloween recipe I have made this Halloween spooky cupcakes, but still cute, that I already shared with my neighbor’s kids and some my husband took to the office. Everyone loved them so much and requested the recipe so that they can make some for Halloween.

I have made two types of cupcakes and also 2 types of frosting. This happens I guess when you try for the first time to make Halloween recipes :). 

The recipe for the Banana Chocolate chip muffins you can find it here.  The marshmallow frosting recipe I found it on this lovely site, Fotologie. The witch hats decorations are bought from Amazon and the ghost and knives are the from the supermarket.  I’ve used 4 colors for the frosting: black, red, green and orange. All bought from Wilton

Ingredients
Lemon cupcakes
Vanilla buttercream

Instructions
Lemon cupcakes
  1. Preheat the oven at 175C and prepare the muffin pan with paper liners
  2. Beat the butter and sugar together with a hand mixer until creamed.
  3. Add the eggs and vanilla essence and beat about 2 minutes until is well combined
  4. In a bowl combine the flour with the baking powder and salt.
  5. Add the dry ingredients to the wet ingredients slowly, beating on low speed. The batter will be thick.
  6. Add the milk, lemon zest and lemon juice and mix on low speed until is combined
  7. Spoon batter evenly into 12 cupcake liners. Bake for about 20 minutes. Don't forget the toothpick test (it's the best).
  8. Remove from the oven and allow them to cool completely before frosting.
Vanilla buttercream
  1. Beat the butter until creamy with a mixer.
  2. Add 500 gr of powder sugar with the vanilla essence and heavy cream. Beat on low speed until well incorporated. Increase to high speed and beat for 3 minutes.
  3. If the frosting is to thin add more powder sugar and if it's to thick another spoon of heavy cream.
  4. You can start coloring the buttercream in your desired colors and start decorating
  5. Also, the buttercream can be stored for 1 week in the refrigerator or up to 3 months in the freezer
